This past December I started eating gluten free. Since then, my gluten free journey has gone pretty well for the most part. Since December, I have had a few foods containing gluten since then to truly test if I am sensitive to gluten, and after all those tests I have still felt like I have an adverse side effect after eating any kind of wheat. So, my gluten free journey will continue!
For the most part, since I eat a mainly whole foods diet, eating gluten free is not an issue. However, there are times where I miss wheat products like bread and PANCAKES! So I’ve been trying to find ways to make simple and tasty wheat-free recipes that are healthy and contain as few ingredients as possible.
With pancakes I’ve tried using almond flour and coconut flour. For some reason, I simple just didn’t like how those would turn out due to either taste or consistency. I’ve also tried banana pancakes without any type of substitute flour and had trouble with the batter being just too thin.
Here I’ve found a recipe that I’ve been making almost every weekend (and a few times a week too). These pancakes are so simple, and are the closest tasting to regular wheat pancakes that I’ve personally tried.
The ingredients include:
1 ripe banana
1/2 cup gluten free oats (I used the Trader Joe’s brand in the video)
You add these ingredients in a blender (I’m using the Vitamix) and mix until the batter is completely mixed. How easy is that?!
I love cooking and I love food, but my favorite type of food is simple food. The type that I can make before work. The kind that is tasty, but won’t give me a stomach ache afterwards.
