Anyone that knows me knows that I’m obsessed with sweet potatoes. I eat them almost every single day.
Strangely enough, I’m not a fan of whole sweet potatoes. The texture is mushy and it’s almost a bit too sweet for me.
However, I’m in LOVE with baked sweet potato fries.
I wanted to share this super simple and easy recipe with you, so you can enjoy it with me.
What you’ll need:
– 1 sweet potato (or more if you’re making multiple servings)
– olive oil
– sea salt
First, preheat your oven to 425 degrees F.
Peal the sweet potato and cut it up into pieces 1/4 inch wide and around 2 inches long. (TIP: use a sharp knife, because they’re a lot harder to cut into than regular potatoes. It’s similar to cutting up squash).
Place the pieces into a mixing bowl and add in 1-2 table spoons of olive oil. I love the Trader Joe’s brand because it’s organic (whooooo) and inexpensive!
Mix the potatoes, so the oil covers each piece as evenly as possible.
Grab your favorite cooking tray and place a piece of parchment paper on it.
Spread the potatoes on the cooking tray. Make sure to not crowd them all on one side and to have them spread out evenly (give them their space :D)
Once the oven is heated to 425, put the sweet potatoes in and set your timer for 10-15 minutes.
Once the timer goes off, check the potatoes and turn them over on the other side.
Put them back in the oven, and set the timer on for 10 more minutes.
The sweet potato fries are finished once they are soft on the inside (and crispy on the outside). Something to note is sweet potatoes tend to burn easily, so watch them closely! If you have pieces that are different sizes, you may have some that are done, and others that need some extra time. If you leave them in a bit longer, the smaller pieces will burn.
After they are finished, salt to your desired taste (I love to use pink Himalayan sea salt) and enjoy!
